Dal Pound Cake

Ingredients
- 1 Cup Yellow Dal (affiliate link)
- 4 Large Ripe Bananas
- 3 Tablespoons Honey (or maple syrup)
- 2 Tablespoons Cinnamon
- 3 Tablespoons Sun Butter (or other nut butter or vegetable oil)
- 2 Tablespoons Whole Flax Seeds
- 1/2 Teaspoon 50/50 Salt
- 2 Teaspoons Vanilla
- A few Drops of Almond Extract (optional)
- 2 Teaspoons Apple Cider Vinegar
- 2 Teaspoons Baking Powder
- 1 Teaspoons Baking Soda
Instructions
- Soak the Dal in water 6 to 12 hours
- Preheat oven to 350 degrees Fahrenheit
- Find a pan that is 8in x 8in or 9in x 9in and at least 2 inches deep.
- Line the bottom of the pan with parchment paper.
- Drain the water from the Dal
- Add the following items in order to a blender: bananas, honey, cinnamon, sun butter, flax, salt, vanilla, almond extract, and then Dal
- Blend until smooth (if the Dal hasn't been soaked long enough, you may need to adda little water
- Add the baking powder, baking soda, and apple cider vinegar to the blender
- Turn the blender on just long enough to mix in the newly added ingredients (it may be necessary to use a spoon to mix in the ingredients
- Pour the batter into the pan
- Bake at 350 F for 35 minutes

How to eat
You can eat the pound cake straight out of the pan. Some people like to add a little more sweetness and flavor by making a toping. One option is to add some banana slices to a hot skillet with some cinnamon and place the banana on top of the cake.

Dr. Paul N. Hopkins, MD, MSPH, FNLA
Dr. Hopkins received his medical training at the University of Utah and Mayo Graduate School of Medicine in Rochester Minnesota.
He is board certified in Public Health and Preventive Medicine as well as Clinical Lipidology.
Dr. Hopkins has been involved in efforts to promote greater understanding and prevention of premature, familial coronary artery disease (CAD) with the Cardiovascular Genetics (CVG) group since 1978. He has been a Principal Investigator (PI) or Co-Investigator for numerous NIH grants focused on the genetics of CAD, hypertension, lipids, diabetes, and metabolic syndrome. Dr. Hopkins is currently Co-Director of Cardiovascular Genetics at the University of Utah and Director of the Cardiovascular Disease Prevention Clinic.
From 1998 to 2004 Dr. Hopkins was International Chair for the MEDPED program (Make Early Diagnoses to Prevent Early Death), started by the late Dr. Roger Williams to find, educate, and help prevent premature CAD in persons with FH. Dr. Hopkins served as an NIH grant reviewer and continues to be a reviewer for numerous medical journals. He teaches at the University of Utah School of Medicine, is an active lecturer, and serves as a statistical consultant for the Center for Clinical and Translational Studies statistics group at the University of Utah.
